WEEK 2: Day 13, Gonna Get My Soup On!

OCTOBER 19th, 2014/SUNDAY:  I call people out who say things like “I won’t do the diet, the food is aweful” or “I can’t do the diet because it’s difficult to stick to while cooking for household” or “these sorts of things just won’t work for me, I like food too much’.  Well guess what, so do I!  With the 30/10 Weight Loss For Life Program, I actually REALLY like what I eat!  The breakfast bars, and soups are my favorite (in fact a co-worker last week commented on how delish my soup aroma was:)

The cook in me as I near week #2, is starting to get creative with my 2c of veggies and soups.  For example, tonight I was craving PHO so I grabbed one of my 30/10 BEEF Soup mixes, and raided the fridge!  Here’s what I did:

PHO-WANNABE-SOUP

  • 1 package 30/10 Beef Soup
  • 1/2 Fresh Lime
  • Thai Basil
  • Cilantro
  • 1/4 cup Bean Sprouts
  • 1 3/4 cup Cauliflower & Broccoli (steamed first)
  • Splash of Fish Sauce
  • Hot Chili Paste or Flakes to taste

Toss the steamed veggies (hot) in a big bowl, tear up some basil and cilantro, pour in the hot pre-mixed 30/10 Beef Soup, splash it with Fish Sauce (just a tad to taste) an top with the bean sprouts then drizzle with Chilie Paste.  BOOM!  You got some Shellie Hart PHO-WANNA-BE Soup! I parked my self on the couch and enjoyed (slowly) for about an hour while watching tv on a cloudy Sunday afternoon:)

HELPFUL HINT: You can even swap the bean sprouts with mushrooms or maybe even add ginger or lemon grass.  Just sayin’…just because you are on the program, doesn’t mean it can’t be uber-delish for you AND anyone else in the household!  Yup, others can make with another beef soup mix and add things like Hoisin Sauce or Sweet Chili Sauce.  You can all eat the same in the house, yours is just more special:)

I’m feeling REALLY good.  No sugar cravings, haven’t touched a glass of wine or any alcohol for that matter since starting my customized 30/10 Weight Loss For Life Program.  And really look forward do my meal at night, I’ll be sharing more recipes as I create them along the way for sure!
