Today, I had the privilege of being at Thurston County's main Food Bank in Olympia,
where the good folks at the Washington State Beef Commission, in cooperation with
other great organizations, donated hundreds of pounds of beef to the less fortunate
who need the resources of the food bank.
Large chunks of sealed cuts of beef were being handed out through the day by the
local wives of cattle ranchers and while I was simply a by-stander, I had the
pleasure of chatting with and getting to know a few of the folks who made it all
happen. What a bunch of great folks, too!

In talking with Bridget Elliott Coon, the Director of Consumer Information (and
herself an eastern Washington rancher) she suggests a jar of salsa poured over a cut
of beef in a crock pot to cook all day. I'm going to try that soon instead of the
water and a few spices I normally use for crock pot beef. She said you can also
toss in a tear-open packet of taco seasoning with that salsa for added flavor.
Again, my thanks to them for their generocity to the community and for making me
realize just how fortunate I am to have gainful employment. Something else I all
too often take for granted.
