A Yummy and Good For You Dessert

Of all places, this month's Reader's Digest magazine has a recipe for Baked Oatmeal.  Now, I have never been one to cozy up to a bowl of oatmeal even though I came from a family that did.  My dad would "MMMmm" like Bill Murray in "What About Bob" when sitting down to Mom's oatmeal and I'd mutter something like; "HORSE FOOD!" and eat my Cheerios.

So, when I saw a recipe for Baked Oatmeal, I was skeptical at best.  As I looked it over, it occured to me that this might be a way for me to get the benefit oatmeal provides without the runny, gloppy mess I remember my dad eating.  So, I tried it and it's actually very good!  Here's how to make it:
