A Great Bread Recipe

 

Do you like making your own breads?  I’ve got a recipe I use so often, I no longer need to go down the check list and it’s well liked.  Here’s what you need:

1/3 cup butter

One egg

1 tsp baking soda

1 tsp cinnamon

½ tsp allspice

1 tsp vanilla extract

10 oz. can of pineapple chunks (or crushed)

1 cup whole wheat flour

½ cup oatmeal

¼ cup applesauce

1 cup chopped nuts (optional)

½ cup raisins

Pinch of salt

First, nuke the butter for about 45 seconds to melt it, then add everything else in a big bowl and stir, while you pre-heat the oven to 350º.  Pam spray a 9X13” pan and pour it all in and toss it in the oven for an hour.

I also like to add some currants or chop up some pitted dates.  There’s no added sugar in this recipe!  The sweetness comes from the pineapple, applesauce and raisins.  Also, you can substitute 4 really ripe bananas for the pineapple, if you prefer.

In fact, I made some today (3/15) and believe me, it tastes better than it looks here!

I simply took an old banana bread recipe and tweeked it, trying this and adding that.  You could frost it, if you don't mind the extra calories!
