I started the 'brine' trick a few years ago, and can promise you this is an easy trick with juicy results! Here are 3 brine recipes that I've tried (I do big turkey breasts year-round). Standard brine time is 1 hour per pound. I go longer but that's up to you. It's harder to brine a large bird unless you have a spare fridge. A trick is to 'brine in a bag' vs. a large pot.
